The AoS ones looks like it has a new Soma sprite, or at the very least new frames.

I have had a play with him. It looks like it is either a version of the DoS sprite with some unique animation frames or it's a heavily edited AoS sprite.

I tried to do a playthrough of both games.
Basically the changes i was able to find so far were C.AOS * sprite changes for soma, when you cast bullet souls. * some map * stat enhancing souls * weapon/armor changes. * some bullet and guardian soul. * cant skip cutscenes or dialouges
C.DOS * extremely difficult. * enemy hp is thicc af. * weakness change * big map changes. * you need to draw the maguc seals. * also cant skep cutscenes or dialouges. * enemies hit harder.
you need to utilize the souls efficiently or else you die quite a lot. Some save states are necessary to move on especially in the beginning unless you want to go over the cutscene from the very beginning.

Not being able to skip cutscenes isn't a feature of both hacks, you can't skip them on your first playthrough of AoS and JP-DoS

I always thought that in dos you were able to.

Its just blows my mind that they didnt like make a patch that includes the seals. Not that the seals bother me. But making the hp and hits different, failing a seal may actually lead to losing 😂😂

I personally played DoS before seal patch existed, so I see no problem in them.
